Burdock Root and Peppercorn Chips (3 ways)

Burdock root is an unusual root that one has probably seen but just doesn’t know what to do with. With a Google search you’ll find that the only recipe that comes up is Kinpira Gobo which is a lovely Japanese braised burdock root, but there are so many things you can do with this ingredient.   • Mixing bowl
  • Pot
  • Tongs
  • Paper Towels

Fried Burdock Root Chips Ingredients

  • 2 Stalks Gobo
  • Oil for Frying
  • 1/8 cup Cornstarch
  • Sprinkle Kosher Salt
  • 4T Whole Peppercorns, coarsely ground

Fried Burdock Root Chips Guide

  1. Heat oil to 350-370F for frying.
  2. Wash, dry and slice gobo thinly on a diagonal.
  3. In a mixing bowl, coat slices with cornstarch and a bit of salt.
  4. When oil is at the right temperature, fry gobo until a nice golden brown color.
  5. Remove from oil and into mixing bowl to season with salt and peppercorns.
  6. Place on paper towel to drain any excess oil.
  7. Plate and enjoy!

Baked Burdock Root Chips Ingredients

  • 2 Stalks Gobo
  • Oil or Oil Spray
  • Sprinkle of Kosher Salt
  • 3T Whole Peppercorns, coarsely ground

Baked Burdock Root Chips Guide

  1. Preheat oven to 325F.
  2. In a mixing bowl, mix a splash of oil, salt, half the pepper, and gobo.
  3. Spread on a baking pan in a single layer and bake for 20 minutes or until it becomes golden brown.
  4. Remove from the oven and cool off.
  5. Plate, sprinkle the rest of the peppercorn and enjoy!

Air Fried Burdock Root Chips Ingredients

  • 2 Stalks Gobo
  • Oil or Oil Spray
  • Sprinkle of Kosher Salt
  • 3T Whole Peppercorns, coarsely ground

Air Fried Burdock Root Chips Guide

  • Preheat air fryer to 300F.
  • Wash, dry and slice gobo thinly on a diagonal.
  • In a mixing bowl, mix together bit of salt, half the peppercorns and all the gobo.
  • Spread on air fryer tray in a single layer and air fry for 20 minutes or until it becomes golden brown.
  • Remove it and sprinkle the rest of the peppercorns, plate and enjoy!
